Peptitler (Grekçe: πεπτίδια; “ıvır zıvır sindirilebilirler”) teşhismlanmış bir düzende, α-amino asitlerin birbirine bağlanmasıyla oluşan endamsız polimerlerdir.[1] Bir amino hamız kalıntısı ile başkası arasındaki bağ bir “amit bağ” veya peptit bağı olarak bilinir.[1]
Tetrapeptit (Oligopeptit)
Proteinler polipeptit molekülleridir (veya çok sayıda polipeptit madun birimi barındırır). Omurga fark peptitlerin endamsız, polipeptitlerin/proteinlerin ise uzun olmasıdır.[1]
Protein sentezi esnasında her amino hamız, başka amino asite sakır sakır, kırılmayan bir polimer olan polipeptid zincirleriyle bağlanır. Polipeptid strüktürsına sertlan amino asitlerin her biri strüktürya peptid bağlarıyla bağlanır. Peptid bağının oluşumu esnasında amino asitlerden birinin amino grubu ile diğerinin karboksil grubu, aradan bir ab çıkması sonucu birleşirler.[1]
Yaklaşık bir polipeptit zinciri 450 amino asitten oluşur.[1] Bilinen en uzun polipeptit, takribî 27,000 amino asitten oluşan, kas dokusunda kâin “titin”dir. Polipeptid zincirine sertlan amino asitlere kalıntı (residue) adı verilir.[1] Zincirin bir ucundaki kalıntı, bağ yapmamış, serbest amino grubu barındırır ve N ucu olarak adlandırılır. Aynı şekilde zincirin başka ucundaki serbest α-karboksil grubu olan kalıntıevet C ucu adı verilir.
